Family-Favorite Turkey Egg Rolls (redone)

Appetizers for dinner? Why not? That's not too far from breakfast for dinner in my opinion. Thursdays I work a split shift, and am not usually off until 8PM. Today, being the first day of the new year the gym was a ghost town. I know, you'd think it would be packed. My theory is that people want to start on a Monday, not a Thursday. Oh, and they're probably still a bit tired and hung over from the night before. Anyway, I took off work early so we could start our experiment off right. On a Thursday and everything.

Cooking tonight was a family affair, everyone helped. I called, and had the hubs start the cooking while I was on my way home. When I got home I took over, then I had the kids roll the egg rolls. The kids were also in charge of cleaning kitchen when all was said and done.

Dinner conversation centered around new year's resolutions; like going to the gym, spending less time on the tablet, and speaking up in class. What we were thankful for last year; like family, and living well within our means so we can afford a nice vacation every year. Lastly, what we were hopeful for in the coming year; such as finally finishing our home remodel, seeing old friends when school starts back up, and making new friends. Leave it to the hubs to take everything to an immature and inappropriate level. soon we were all in tears from laughing so hard.
 I try to keep all of my goals/resolutions positive. I feel that what you resist will persist, and I try to focus on different qualities and characteristics that I would like to embody or strive towards. One of the characteristics for 2015 is Serene. I would like to try to become more relaxed and calm. On the inside and outside. I am a high strung person naturally, so I could definitely do with some serenity.

As far as the "family-favorite" goes; my husband ate quite a few of them, as did I. My daughter, who is a VERY picky eater, ate only 1, and it took her longer than all of us to finish it. I'm pretty sure she was hoping I would let her throw it out, and fix whatever she wanted. I'm actually waiting for her to come ask her dad if she can have a snack. My son, who has a great, and very adventurous appetite, saw my daughter take only 1, so he did the same. Sometimes influence, and/or the fear of missing out wins. I'm waiting for him to come tell me he is hungry as well.
For the recipe tonight I will post it as it's written, and then I will fill you in on what I did to change it up this time, and what I plan to do when I make it next time. Prep: 25 minutes Cook: 5 minutes/batch Makes: 1 dozen

1/2 pound ground turkey
4.5 C coleslaw mix
3Tbsp sesame seeds
1Tbsp reduced-sodium soy sauce
2tsp Worcestershire sauce
3/4tsp ground ginger
1/2tsp seasoned salt
12 egg roll wrappers
oil for deep-fat frying
sweet & sour sauce

1. In a large skillet, cook the turkey over medium heat until done, and no longer pink; drain. Stir in the coleslaw mix, sesame seeds, soy sauce, Worcestershire sauce, ginger and seasoned salt. cook for 3-4 minutes until cabbage is crisp-tender.


2. Place 1/4C of turkey mixture in the center of the egg roll wrapper. Fold bottom corner up, and the sides in towards the center. Wet the remaining corner, roll up tightly, and seal. Repeat with the remaining wrappers and turkey mixture.

3. In an electric skillet or deep-fat fryer, heat oil to 375 degrees. fry egg rolls, a few at a time, for 3-4 minutes or until golden brown, turning often. Drain on paper towels. Serve with sweet & sour sauce.

I used 1 pound of ground chicken, instead of turkey. My family doesn't really care for the taste of turkey, or turkey by-products. I also placed the egg rolls on a cookie sheet sprayed with cooking spray, and then lightly brushed the egg rolls with olive oil, and baked them at 400 degrees for about 15 minutes, or until the were crispy and golden brown.
Next time, I would double the seasonings. I doubled the meat, but kept the rest of the ingredients at the same portions. They came out a bit on the bland side. Next time I will double everything but the coleslaw. I feel like 1 pound of chicken and 4.5C of coleslaw was a good ratio. Also, I was able to get 20 egg rolls vs. the 1 dozen. probably because I used 1 pound of meat instead of 1/2 pound.

I am just learning the art of blogging, and learning my way around. I will try to start adding pictures to my blogs so you can see how things turn out in real life, as opposed to cook book pictures.
